A research on microbiological properties of Torba yoghurts sold in İzmir province

Öz:
Bu çalışmada İzmir bölgesinin yerel pazarlarında satılmakta olan TorbaYoğurtlarının mikrobiyolojik kalitesi değerlendirilmiştir. Toplamda 30 adettorba yoğurdu örneği analiz edilmiştir. Torba yoğurdu örneklerindeLactobacillus delbrueckii subsp. bulgaricus ve Streptococcus thermophilus sayılarısırasıyla 2.1 x 10 6 - 4.1 x 10 9 cfu/g ve 1.0 x 10 5 - 7.8 x 108 cfu/g bulunmuştur.Toplam mezofilik aerobic bakteri sayısı, proteolitik ve lipolitik bakteri sayıları,maya-küf sayısı, koliform bakteri sayısı, Staphylococcus aureus ve Enterococcusssp. sayıları sırasıyla 1.5 x 10 6 - 7.5 x 10 9 cfu/g, 1.1 x 10 1 - 5.4 x 10 4 cfu/g, 1.1 x 10 1- 2.1 x 10 4 cfu/g, 1.4 x 10 2-8.1 x 10 5 cfu/g, < 10- 7.1 x 102 cfu/g, <10- 1.6 x 10 3cfu/g ve <10- 3.6x104 cfu/g olarak bulunmuştur. 13 örnekte Koliformlar veStaphylococcu s ssp. sayısı ve 8 örnekte Enterococcus ssp. sayısı 10 cfu/g dandaha düşük düzeyde bulunmuştur. Bu çalışma sonucu torba yoğurduörneklerinin mikrobiyolojik kalitesinin arzu edilebilir seviyede olmadığıgöstermiştir. Yüksek indikatör bakteri sayısına sahip olduğu göz önünealındığında bazı torba yoğurtlarının halk sağlığı açısından önemli bir riskoluşturabileceği görülmüş, bu nedenle torba yoğurdu üretiminde hijyenikşartlara dikkat edilmelidir.

Öz:
In this study,microbiological quality of Torba yoghurt sold at local markets inIzmir was determined. In Torba yoghurt samples, numbers of Lactobacillusdelbrueckii subsp. bulgaricus and Streptococcus thermophilus were 2.1 x 10 6 - 4.1x 10 9 cfu/g and 1.0 x 10 5 - 7.8 x 10 8 cfu/g respectively. The total numbers of totalmesophilic aerobic, proteolytic and lipolytic bacteria, yeast-mould, coliformgroup bacteria, Staphylococcus aureus and Enterococcus ssp. which found inyoghurt as contaminant were 1.5 x 10 6 - 7.5 x 10 9 cfu/g, 1.1 x 10 1 - 5.4 x 10 4cfu/g, 1.1 x 10 1 - 2.1 x 10 4 cfu/g, 1.4 x 10 2-8.1 x 10 5 cfu/g, < 10- 7.1 x 10 2 cfu/g,<10- 1.6 x 10 3 cfu/g and <10- 3.6x10 4 cfu/g respectively. The number ofcoliforms and Staphylococcu s aureus in 13 samples and the counts ofEnterococcus ssp. in 8 samples were found less than 10 cfu/g. It can beconcluded that microbiological quality of Torba yoghurt samples were not atdesired level. According to the high numbers of indicator bacteria counts, someTorba yoghurt samples could be potential risk factor for public health . Theproduction conditions of torba yoghurt must be hygienically for marketing.
