Fitokimyasal Kaynağı Elma Posası

Öz:
Meyve işleme sanayinin kabuklar, çekirdekler, tohumlar gibi yüksek miktarlarda atık materyalleri mevcuttur. Atıkların ortadan kaldırılması genellikle problem teşkil eder. Atıklar antimutajenik, kalp koruyucu, antibakteriyel, antiviral ve antitumoral etkilere sahip şekerlerin, minerallerin, organik asitlerin, gıda lifi ve fenoliklerin önemli kaynaklarındandır. Elma posası; elma suyu yapım aşamasında oluşan yan ürün olup, meyve suyu sanayi atıklarının %25-35'ini oluşturmaktadır. Zengin polifenol, mineral ve besinsel lif kaynağı olmasına rağmen ticari olarak hayvan yemi ve pektin üretiminde yararlanılmaktadır. Polifenollerin çoğunun elma posasında kaldığı gerçeği göz önüne alındığında bu bileşiklerin geri kazanılıp ürünün ticari kullanımı umut verici görünmektedir. Elma ve benzeri atıkların yüksek besin değerlerinin anlaşılması ile bunlara olan ilgiyi artırmış ve gıda katkı maddesi veya gıda takviyesi olarak kullanımlarını gündeme getirmiştir.

Apple Pomace as a Source of Phytochemicals

Öz:
The processing of fruits results in high amounts of waste materials such as peels, seeds, stones. Disposal of these materials usually represents a major problem. It is well known that these by-products represent an important source of sugars, minerals, organic acid, dietary fiber and phenolics, which have a wide range of action including anti-tumor, anti-viral, anti-bacterial, cardio-protective and anti-mutagenic activities. Apple pomace is a by-product of apple juice production, and it amounts up to 25-35% of the processed fruit. Although apple pomace is a rich source of polyphenols, minerals and dietary fiber, it has been conventionally used as an animal feed or for pectin production. The possible use of apple pomace for further exploitation in the production of food additives or supplements with high nutritional value has recently gained and increased interest because of their high-value.
