Gıda Teknolojisinde Işınlamanın Yeri ve Önemi

Öz:
Gıdaların kalite ve güvenliğini sağlamak amacıyla gama ve X ışınlarına maruz bırakılmasını kapsayan ışınlama teknolojisi, son yıllarda gıda kaynaklı hastalıklarda görülen büyük artış ile önem kazanmıştır. Gıdaların ışınlanması, mikroorganizmaların, parazitlerin ve böceklerin gelişimi ile depolama ve dağıtım sırasında oluşabilecek ciddi kayıpları kontrol altında tutabileceği öngörülen yöntemlerden biridir. Yapılan araştırmalar sonucunda bu yöntemin birçok gıda ürününün güvenliğini sağlamadaki etkinliği ortaya konmuş ve birçok ülkede ışınlamanın gıda sanayinde kullanılmasına izin verilmiştir. Gıda güvenliğini sağlama amacının yanında ışınlama işlemi, gıdaların raf ömrünü uzatmak için de çeşitli ürünlerde kullanılmaktadır. Bu derlemede ışınlamanın gıda ürünlerinin muhafazasında kullanımı ve gıdaların besin değeri üzerindeki etkisi incelenmiştir

Role and Importance of Irradiation for Food Technology

Öz:
Food irradiation involves exposure of foods to gamma and X rays to enhance quality and safety of foods. Occurrence of higher incidence of foodborne diseases during recent years irradiation has been an important tool to prevent these diseases. Food irradiation is one of the methods to be considered to control the growth of microorganisms, parasites and insects, and to prevent severe losses during storage and transportation. Upon detailed research, irradiation has been shown to be an effective tool to ensure safety of a various foods and it has been approved in several countries. Besides used for assurance of food safety, irradiation is also used to increase storage life and improve quality of variety of foods. In this review, the use of irradiation in preservation of food products and the effect of irradiation on quality of foods were reviewed
