Polisiklik aromatik hidrokarbonların bazı gıdalarda bulunuşu ve insan sağılığı üzerine etkileri

Öz:
Polisiklik aromatik hidrokarbon (PAH) lar petrol ürünleri, odun, tütün ve bazı gıda maddeleri gibi organik materyallerin pirolizi sonucu şekillenen çevresel kirleticilerdir. Doğada hava, su ve toprak gibi çevresel kaynaklarda bulunurlar. Gıdalar bu çevresel kaynaklarla doğrudan temas ya da uygun olmayan şartlarda pişirilmesi sonucu PAH'lara maruz kalmaktadır. Şekillenen bu PAH'lar insanlarda teratojenik, mutajenik ve kanserojenik etkiler meydana getirmektedir. Bu derlemede PAH'ların doğada bulunuşu, insan sağlığı üzerine olumsuz etkileri, gıdalara uygulanan pişirme yöntemlerinin PAH'ların oluşumları üzerine etkileri incelenmiştir.

The presence of polycyclic aromatic hydrocarbons in some foods and their effects to public health

Öz:
Polycyclic aromatic hydrocarbons (PAHs) are pollutant of environment formed by the pyrolysis of organic matter, in particular from fosil, fuels and some food materials. In nature, they are exist in environmental source such as atmosphere, water and soil. Foods have exposed to PAHs by direct contact to these sources or due to improper cooking procedures. Those PAHs are harmful to human health as teratogenic, mutagenic and cancerogenic effects. In this article, it was examined the presence of PAHs in nature, their harmful effects to human health and the effects of cooking procedures on their formation.
