Glukosinolatlar ve insan sağlığı

Öz:
Bu derlemede, glukosinolatların genel kimyasal yapılarına, adlandırılmalarına, bitkilerdeki dağılımına, parçalanma ürünlerine, içerik üzerine etki eden faktörlere, işleme ve depolama sırasında meydana gelen değişimlere, analiz yöntemlerine, sağlık açısından özellikle guatrojenik ve antikarsinojenik etkilerine değinilmiştir.

Glucosinolates and human health

Öz:
In this review, general chemical structure, nomenclature, content and distribution among plants, degradation products, factors affecting glucosinolate composition, changes during processing and storage, analytical methods, health effects especially for goitrogenic and anticarcinogenic of glucosinolates have been discussed.
