The wild plants consumed as a food in Mihalıççık district (Eskişehir/Turkey) and consumption forms of these plants

Öz:
Bu çalışmada Eskişehir’in Mihalıççık ilçesinde kültürü yapılmayan ancak gıda olarak tüketilen yabani bitkiler incelenmiş, ve bu bitkilerin tüketim durumları belirlenmiştir. Tesadüfi olarak seçilen aileler üzerinde uygulanan anketlere göre, bölge halkının % 66’sının yabani bitkileri gıda olarak tükettikleri saptanmıştır. Bölgede tüketilen 18 familyaya ait 25 bitki taksonunun, herhangi bir işlem uygulanmadan doğrudan tüketilmelerinin yanı sıra başta yemeklerde olmak üzere, salata ve börek iç malzemesi olarak kullanıldığı ve ayrıca kaynatıp suyu içilerek de tüketildiği tespit edilmiştir. Bu çalışmada tanımlanan bitkiler sırası ile Amaranthus retroflexus (Kızılbacak), Anthemis sp. (Papatya), Arum elongatum subsp. detruncatum (Yabani Mancar, Yılan Yastığı), Capsella bursa pastoris (Kuş Ekmeği), Chenopodium album subsp. album var. album (Sirken), Cichorium intybus (Karakavuk), Cirsium sp. (Kavgan Dikeni), Crocus chrysanthus (Çiğdem), Cynodon dactylon var. villosus (Ayrık), Lamium amplexicaule (Ballıbaba), Malva neglecta (Ebegümeci), Mentha longifolia subsp. typhoides var. typhoides (Yabani Nane), Onosma isauricum (Balotu), Papaver rhoeas (Gelincik), Plantago major subsp. intermedia (Kırkdamar), Plantago lanceolata (Kırkdamar), Polygonum cognatum (Kuzukulağı-Madımak), Rumex crispus (Efelek, Labada), Rumex tuberosus subsp. tuberosus (Efelek), Silene conica (Toklubaşı), Sinapis arvensis (Hardal), Thymus praecox subsp. skorpilii var. skorpilii (Kekik), Tragopogan latifolius var. angustifolius (Yemlik), Trifolium pratense var. pratense (Karabaş), Urtica dioica (Isırgan)’dır. Çalışmada ayrıca bu bitkilerin tıbbi etkileri hakkında da bilgi verilmiştir.

Mihalıççık ilçesinde (Eskişehir/Türkiye) gıda olarak tüketilen yabani bitkiler ve bu bitkilerin tüketim şekilleri

In this study, the wild plants which are not cultivated but consumed as food in Mihalıççık district, were investigated, and their consumptions were determined. According to the results of the questionnaire applied to randomly selected families, it is obtained that 66 % of the people living in this region have been consuming wild plants as a food. It is found that this plants, which include 25 plant taxons belonging to 18 families, are consumed directly without being processed or used especially in meals, salads and pastries as an ingredient, and also consumed as a drink after boiling in water. In this study, the plants are identified as follows: Amaranthus retroflexus (Kızılbacak), Anthemis sp.
